Ever since my trip to Egypt, I’ve been wanting to make koshari, an Egyptian street food dish made of rice, macaroni, lentils and chickpeas, topped with a spicy tomato sauce and fried onions. Healthy!
I could seriously eat hummus and baba ghanoush and delicious breads everyday, for multiple meals, and not get tired of it. And I did, for the two weeks I was in Cairo. Did I mention I’m on a diet?
